It’s been quite a learning curve but, I am happy to release my first cookbook, 5 Weeknight One Pot Meals. These recipes are easy to prepare because they are all done in one pot. That makes them easy to clean up after and I am all about that. And, they are very tasty if I do say so myself. There are 5 recipes in this free ebook, enough to get you through a workweek. It also includes a grocery list at the beginning for everything you need to make these dinner dishes. I have to thank my cousin Barbara for that.

Since this is an ebook, you can have it in your hands (so to speak) as soon as you download it from the email I will send you. Once you have the file, you can send it (or save it) to Kindle or iBooks. That way you have it at the ready on your mobile phone, tablet, iPad or computer, even when you are not online. You can also print it off if you like. I have it on my iPad and find it to be very handy when cooking these 5 recipes.

So What Recipes?

So you’re wondering which ones they are? Well there is the Sausage, Cabbage and Potatoes. Creamy potatoes flavored from rope sausage, balanced out with al dente cabbage. All cooked up in one pot in about 30 minutes. Next, the easiest pot of beans you will ever make. No soak Slow Cooker Pinto Beans. Cooked with smoked turkey necks. They are low-fat and brimming with smokey goodness. If you can’t find the turkey necks you can always use smoked ham hocks. Now, Flo’s Tortilla Soup, made with chicken, 2 kinds of beans, corn and canned enchilada sauce. This is one of my go to meals for a crowd. Ham and Asparagus Pesto Pasta is made in one pot by cooking the asparagus and pasta together. I cheat just a tad on this one. I warm the ham in the microwave before adding it to the pasta and asparagus. Complete the flavor jarred pesto. Make sure to leave a bit of the pasta water in the pot so that you get a nice creamy sauce. And, last but not least, One Pan Tilapia. is simple but elegant. A healthy one pan meal finished with mushrooms and fresh spinach.
